Chia Seed Pudding

My latest obsession!! this recipe is perfect for time poor mornings and is something I prepare the night before to take and eat where ever I may be during the morning. Chia seeds are also a powerhouse packed full of amazing health benefits including fibre, antioxidant, anti-inflammatory and plant based proteins!

This is a base model that can be adapted to different flavour combos and toppings!

Ingredients:

4 Tablespoons of chia seeds

1 Table spoon pea/whey protein powder

1 Tablespoon of coconut yoghurt

1/2 teaspoon of ground cinnamon

3/4 cup of coconut water, coconut milk, almond milk, other milk

Toppings: blueberries, strawberries, raspberry, banana, kiwi, nuts and seeds, peanut butter or granola

Method:

  1. Combine the chia seeds, protein and cinnamon in the bottom of a jar.

  2. Add in yoghurt and water, stir thoroughly to combine all ingredients and allow to sit for 5 mins

  3. Stir again and store in the fridge over night or for 1 hour if making it the day of.

  4. Once set, top with your favourite combo of toppings- my current combo is berries and a nut and seed mix
