Teriyaki Salmon

If you love teriyaki sauce as much as I do when you go to a Japanese restaurant, then you’re gonna love this!!! I like to pair this with some rice and greek yoghurt with a side salad for dinner… sort of feels like I’m have deconstructed sushi, its AMAZING!

Ingredients:

  • Salmon

  • 2 garlic cloves crushed

  • Thumb sized ginger grated (1 tablespoon minced ginger)

  • 1/2 bunch coriander coarsely chopped (1 teaspoon dried) *

  • 1 long red chilli roughly chopped (optional)

  • 5 table spoons soy sauce

  • 3 tablespoons teriyaki sauce

  • 1 teaspoon Sesame oil

  1. Preheat the oven to 120 degrees celsius

  2. In a mixing jug combine the garlic, ginger, herbs, chilli and sauces; set aside

  3. Place salmon in a baking dish that is just big enough... a tray too big will only dry out the marinade rather than bake into the salmon!

  4. Pour over the marinade and make sure all sides of the salmon are well coated.

  5. Bake salmon for 25mins- this doesn't seem like a lot of time but trust me it will melt in your mouth if you keep to it!

Serve with a side of green broccolini topped with some left over sauce in the baking dish and a serving of coconut rice (recipe coming!!)
