My take on “Nasi Goreng”
Serves 4 Large portions
This recipe was inspired by the super popular Indonesian dish Nasi Goreng! If you hadn’t noticed yet… I love veggies!! I think it give so much extra colour and flavour to the dish so its not just rice and egg with some sauce, it will also make it stretch further if you need to feed extra mouths so load it up! Take inspo from my version and make this super simple and quick dinner!
Ingredients:
3 Cups of dry jasmine rice
4-8 eggs (depending on personal preference)
2-3 Tablespoons Vegetable/peanut oil
3 Garlic cloves, crushed
Thumb piece of ginger, grated
1 Large onion, diced
2 mild green chillies finely sliced
1 broccoli head, chopped into bite sized florets
1 green or red capsicum, diced
2 carrots grated
1/2 purple cabbage sliced thinly
Sesame seeds & chilli flakes (optional)
3 Tablespoons kecap manis
2 Tablespoons soy sauce
1 Teaspoon sesame oil

Method:
Cook the rice in a rice cooker or over the stove following packet instructions (*I like to cook and cool the rice the day before or in the morning as this improves the quality of the starch in the rice! Not essential though!)
Prepare all vegetables and heat 2 tablespoons of the oil in a wok or deep large fry pan.
Once hot, add in the garlic, onion, chilli and ginger. Stirring often to avoid burning until super fragrant and the onion starts to become transparent
Add in all vegetables and cook through until they are softened and wilted down in size. Add in a splash of water here and there to help the cooking process if it is starting to stick and burn to the bottom.
Add in the cooked rice and sauces, mixing to thoroughly combine and heat through!
While that is heating up, put on a small fry pan to cook your eggs sunny side up! I put down sesame seeds and chilli flakes on the pan first to coat the eggs on the bottom. Pop on a lid to cook the egg whites on top without having to turn the egg over and keeping that yolk runny!
Serve up the rice on the bottom, topping with an egg and adding extra sesame, chilli and a dash of soy if preferred!
