Super Simple Curry Base
This is hoping to be a recipe that can be adapted to what ever protein you are feeling for your curry. It is one that I use time and time again no matter if I add in chicken, beef, kangaroo, or keep it full plant based with chickpeas or vegetables and tofu. The best part about this recipe is that once you have your base of spices and vegetables you can quickly whip this one up each week without having to re-buy all your ingredients list below.
Ingredients:
1-2 tablespoon of ghee
1 brown onion, chopped
3 cloves garlic, crushed
1 thumb size ginger root, grated
1/2 long red chilly, chopped
1 teaspoon cumin
1 teaspoon paprika
1 teaspoon mixed herbs
2 cardamom pods (optional)
2 teaspoons garam masala
1 teaspoon curry powder
1 teaspoon turmeric
1/2 teaspoon cinnamon
1/4 teaspoon cayenne pepper
1 sweet potato cubbed
1/2 broccoli head, cut into florets
add protein (chickpeas, tofu, seared beef, chicken, kangaroo etc.)
1 can chopped tomatoes
1.5 cups beef/veg stock
Salt and pepper
Top with:
Coriander chopped finely
Greek yoghurt
Toasted almond flakes
Extra fresh chilly sliced.
Method:
Pre-prepare all ingredients into bowls to first make the process easier when it comes to cooking. Spices in one bowl; onion, garlic, ginger, chilli in another; pre cooked protein till golden or browned; and vegetables cut in another bowl.
First, melt the ghee in a hot pot/deep pan/dutch oven and seared off onion mix for a few minutes till onion start to brown. Then add in your spices and cook for a further minute till fragrant.
Add in vegetables, proteins, chopped tomatoes and stock. Stir to combine. Bring to the boil and then lower to a simmer.
Leave to simmer for 25-30 minutes to let the sauce thicken and everything inside to soften. Stir occasionally to prevent burning and promote even cooking.
Cook the rice in the mean time and prepare any toppings of your liking.
Serve with rice, a handful of fresh rocket and a generous serving of curry on top! Top with your favourites and enjoy the warming, spicy hearty-ness of this curry.
